Lay the bird on its back. Use a sharp knife to cut the skin in the place where the thigh approaches the carcass.

Pull the leg to the side. as a result, it will separate on its own and the joint with which the leg is attached to the carcass will be exposed.

Cut with a knife along the joint. this way you can easily separate a whole leg without losing meat. You don’t need to saw anything with a knife! Cut strictly along the joint so as not to blunt the knives, this applies to any part of the chicken, not just the legs.

Repeat the procedure, that is, cut off the second leg in exactly the same way.

Divide the whole leg into two parts: the thigh and the drumstick. To do this, you need to cut it at the joint into two parts.

Chicken fillet

With a knife, make a deep cut along the pectoral ridge, pressing the knife to the keel (central large bone). so that there is no excess meat left on it.

When you hit the fork bone, you need to go to the joint where the shoulder is attached and trim the joint. And then just remove the meat from the frame.

Do the same a second time, moving from the back side along the chest ridge to make two pieces of chicken breast. Remove the skin from it. you get two fillets, the most valuable and dietary part of the chicken.


First, feel for the joint just below the breast. With a knife, make a sharp movement with the knife down through the joint. this way the wing can easily be separated from the carcass.

Repeat the procedure to obtain two chicken wings. Chicken wings can be left intact or the extreme phalanx can be immediately cut off. there is almost no meat on it, it goes into soup and broths, it is no longer good for anything.
